Origin of Le Cordons Bleus
In 1578, Henry III, King of France, founded “Holy Spirit Knights Mission”. These Royal Knights appointed by the King, without exception, wore a Le Cordons Bleus Cross.
They were chefs specifically selected to prepare sumptuous food for court celebrations in Royal kitchen. Since then, Le Cordons Bleus has become a symbol of culinary excellence.
The French dynasty’s national strenght under the rule of Louis XIV was strong. The king has a high pursue for gourmet food. He made efforts to cultivate the French cooks and actively run a national cooking contest. The winner was hired by court and granted Mof Cusinier, i.e., Le Cordon Bleu.
In 1949, La Commanderie des Cordons bleus de France was established. The Association adhered to Le Cordons bleus founder Louis XIV’s expectations of French cuisine, to promote the traditional food culture in France and gave recognition to skilled cooking professional practitioners.
